Stage 1 Chemistry: Reverse Spherefication
My Stage 1 Chemistry class were recently given the opportunity to participate in a molecular gastronomy lesson by making “Ooho” balls. Students prepared a cordial solution with calcium lactate which, when combined with sodium alginate, formed a jelly-like membrane, encasing the cordial within.
Whilst the students enjoyed eating the blobs of cordial, most were grossed out by the texture of the membrane. Famously, this science has been used as a substitute for plastic water bottles and has been most notably used at the London Marathon since 2017.
